Keto Chicken Alfredo with Zucchini Noodles

A low-carb twist on classic chicken Alfredo using zucchini noodles.

Ingredients

  • 2 medium zucchinis, spiralized
  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Cook chicken until golden brown, about 6 minutes per side.
  3. Remove chicken and set aside.
  4. In the same pan, melt butter and sauté garlic for 30 seconds.
  5. Add heavy cream and simmer for 3 minutes.
  6. Stir in Parmesan cheese until melted.
  7. Toss zucchini noodles in the sauce for 1 minute.
  8. Serve with sliced chicken on top.

Notes

  • Use a spiralizer for even zucchini noodles
  • Pat zucchini dry to prevent watery sauce
  • Add crushed red pepper for heat
