Ingredients
Scale
1 cup unsweetened almond milk
1/2 cup unsweetened cocoa powder
1/4 cup erythritol or preferred sweetener
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup coconut oil, melted
1/2 teaspoon gelatin (optional, for thicker mousse)
Instructions
In a mixing bowl, combine almond milk, cocoa powder, erythritol, vanilla extract, and salt.
Whisk until smooth and well combined.
Slowly add the melted coconut oil while continuing to whisk.
If using gelatin, dissolve it in a small amount of warm water and add it to the mixture.
Pour the mousse into serving dishes and refrigerate for at least 2 hours to set.
Serve chilled and enjoy your keto chocolate mousse!
Notes
For a sweeter mousse, adjust the amount of erythritol to taste.
Make sure the coconut oil is not too hot when adding to the mixture to avoid cooking the other ingredients.
This mousse can be topped with berries or nuts for added flavor and texture.
