  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add spinach and cook until wilted, then remove from heat.
  4. In a bowl, mix cream cheese, mozzarella, Parmesan, sautéed spinach, Italian seasoning, salt, and pepper.
  5. Cut a pocket in each chicken breast and stuff with the spinach mixture.
  6. Place stuffed chicken breasts in a baking dish and drizzle with olive oil.
  7. Bake for 25-30 minutes or until chicken is cooked through.
  8. Let rest for a few minutes before serving.
