Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then cook for 4-5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Add heavy cream, Parmesan cheese, and Italian seasoning. Stir until smooth.
  5. Mix in spinach and sun-dried tomatoes. Cook until spinach wilts.
  6. Return salmon to the skillet and simmer for 2-3 minutes.
  7. Serve hot.
