A quick and easy keto-friendly version of egg roll filling without the wrapper.

Ingredients

  • 1 lb ground pork
  • 1 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 14 oz coleslaw mix
  • 2 tbsp soy sauce (or coconut aminos)
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, sliced

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add ground pork and cook until browned, breaking it apart as it cooks.
  3. Stir in ginger, garlic, and onion. Cook for 2 minutes.
  4. Add coleslaw mix and cook until softened, about 3 minutes.
  5. Pour in soy sauce and rice vinegar. Stir well.
  6. Sprinkle with red pepper flakes (if using) and green onions.
  7. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For extra crunch, top with toasted sesame seeds.
  • Replace pork with ground chicken or turkey if preferred.
