Keto Lemon Bars

Delicious low-carb lemon bars with a buttery almond flour crust and a tangy lemon filling. Perfect for a keto-friendly dessert.

  • 1 ½ cups almond flour
  • ¼ cup powdered erythritol
  • ¼ tsp salt
  • 6 tbsp melted butter
  • 3 large eggs
  • ½ cup lemon juice
  • 2 tbsp lemon zest
  • ½ cup powdered erythritol (for filling)
  • ¼ cup coconut flour
  • ½ tsp baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix almond flour, ¼ cup erythritol, salt, and melted butter in a bowl. Press into the pan to form the crust.
  3. Bake the crust for 12-15 minutes until golden. Set aside.
  4. Whisk eggs, lemon juice, lemon zest, ½ cup erythritol, coconut flour, and baking powder until smooth.
  5. Pour the lemon filling over the crust. Bake for 18-20 minutes until set.
  6. Cool completely before slicing. Dust with powdered erythritol if desired.
