  • 1/2 cup fresh lemon juice

  • 1/4 cup powdered erythritol (for filling)
  • 1/4 cup coconut flour
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F.
  2. Mix almond flour, 1/4 cup erythritol, and melted butter for the crust.
  3. Press the crust mixture into a lined baking dish.
  4. Bake the crust for 12 minutes, then let it cool.
  5. Whisk eggs, lemon juice, lemon zest, 1/4 cup erythritol, coconut flour, vanilla, and salt.
  6. Pour the filling over the crust.
  7. Bake for 20 minutes or until set.
  8. Cool completely before slicing.
