  • 1 lemon, juiced and zested
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 cups cauliflower rice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp, salt, black pepper, and red pepper flakes. Cook for 2-3 minutes per side.
  4. Stir in lemon juice and zest. Remove from heat.
