  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup erythritol
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a cake pan.
  2. Mix almond flour, cocoa powder, baking powder, and salt in a bowl.
  3. In another bowl, beat erythritol and butter until fluffy.
  4. Add eggs one at a time, then vanilla and food coloring.
  5. Alternate adding dry ingredients and sour cream to the wet mix.
  6. Pour batter into pan and bake for 25-30 minutes.
  7. Let cool before serving.
