Ingredients

  • 1 head of cauliflower, riced
  • 1 cup smoked gouda cheese, shredded
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rice the cauliflower using a food processor or box grater.
  3. In a large bowl, combine the riced cauliflower, smoked gouda, eggs, almond flour, green onions, garlic powder, onion powder, salt, and pepper.
  4. Mix until well combined.
  5. Grease a muffin tin and scoop the mixture into each cup, filling them about 3/4 full.
  6. Bake for 25-30 minutes or until golden brown and set.
  7. Let cool slightly before removing from the muffin tin.
