  • 4 large bell peppers, any color
  • 1 lb ground beef (85% lean)
  • 1 cup cauliflower rice
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sugar-free marinara sauce
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add onion and garlic, cook until softened, about 3 minutes.
  5. Add ground beef and cook until browned, breaking it up with a spoon.
  6. Stir in cauliflower rice, marinara sauce, Italian seasoning, salt, and pepper. Cook for 5 minutes.
  7. Remove from heat and stir in half of the shredded cheese.
  8. Stuff the mixture evenly into the bell peppers.
  9. Place peppers in a baking dish and top with remaining cheese.
  10. Bake for 25-30 minutes until peppers are tender and cheese is bubbly.

Notes

  • Choose firm, fresh bell peppers for best results.
  • You can prepare the filling up to one day ahead.
  • Leftovers keep well in the refrigerator for up to 3 days.
