  • 1 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup erythritol or preferred sweetener
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup brewed espresso or strong coffee
  • Cocoa powder for dusting

Instructions

  1. Preheat your waffle maker.
  2. In a bowl, whisk together the eggs, mozzarella cheese, almond flour, cocoa powder, erythritol, and vanilla extract until well combined.
  3. Pour the batter into the preheated waffle maker and cook until golden brown.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold in the mascarpone cheese and brewed espresso into the whipped cream.
  6. Once the chaffles are cooked, layer them with the mascarpone mixture in a serving dish.
  7. Repeat the layers and finish with a dusting of cocoa powder on top.
  8. Chill in the refrigerator for at least 1 hour before serving.
