  • 1 cup almond flour
  • 2 tbsp cocoa powder
  • 1/4 cup melted butter
  • 1 tbsp powdered erythritol
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee (cooled)
  • 1 tbsp unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix almond flour, cocoa powder, melted butter, and erythritol to form a dough.
  3. Press the dough into the bottom of small cups or ramekins.
  4. Bake for 10 minutes, then let cool.
  5. Whip mascarpone, heavy cream, erythritol, and vanilla until fluffy.
  6. Brush the cooled crusts with coffee.
  7. Layer the mascarpone cream on top.
  8. Dust with cocoa powder.
  9. Chill for 2 hours before serving.

Notes

  • Use decaf coffee if avoiding caffeine.
  • Store leftovers in the fridge for up to 3 days.
  • Replace almond flour with coconut flour for a nut-free version.
