A light and fresh keto-friendly dish featuring zucchini noodles tossed with seasonal vegetables and a creamy sauce.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bell peppers, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and red onion, sauté for 2 minutes.
  3. Add bell peppers and cherry tomatoes, cook for 3 minutes.
  4. Stir in zucchini noodles and cook for 2 minutes until tender.
  5. Pour in heavy cream and butter, stir until combined.
  6. Sprinkle Parmesan cheese and mix well.
  7. Season with salt and pepper.
  8. Garnish with fresh basil before serving.

Notes

  • Use a spiralizer for even zucchini noodles.
  • Do not overcook the zucchini to avoid mushiness.
