Lasagna Soup

Lasagna Soup is a comforting one-pot dish that combines the flavors of traditional lasagna in a hearty soup form, perfect for chilly days.

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and simmer for about 10-12 minutes until noodles are tender.
  5. Stir in ricotta cheese and half of the mozzarella cheese until melted and combined.
  6. Serve hot, garnished with remaining mozzarella and Parmesan cheese.

Notes

  • Feel free to add vegetables like spinach or zucchini for extra nutrition.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
