A delicious layered entremets dessert that combines various textures and flavors to create a delightful experience for every palate.

Ingredients

  • Chocolate sponge cake – 200g
  • Vanilla mousse – 300g
  • Raspberry gelée – 150g
  • Dark chocolate ganache – 250g
  • Fresh raspberries – 100g
  • Whipped cream – 200g
  • Gelatin sheets – 5g
  • Sugar – 100g
  • Water – 50ml

Instructions

  1. Prepare the chocolate sponge cake and let it cool completely.
  2. Make the vanilla mousse by whipping cream and folding it into a vanilla custard base.
  3. Prepare the raspberry gelée by dissolving gelatin in water and mixing it with raspberry puree and sugar.
  4. Layer the chocolate sponge cake at the bottom of a mold.
  5. Pour the raspberry gelée over the sponge layer and let it set in the fridge.
  6. Add a layer of vanilla mousse on top of the set gelée.
  7. Top with dark chocolate ganache and smooth it out.
  8. Chill the entremets in the fridge for at least 4 hours or overnight.
  9. Once set, remove from the mold and decorate with fresh raspberries and whipped cream.

Notes

  • Ensure the gelatin is fully dissolved before adding to the raspberry puree.
  • For a richer flavor, use high-quality dark chocolate for the ganache.
  • Let the dessert sit at room temperature for a few minutes before slicing for easier serving.
