Lemon Butter Chicken Thighs

A simple and flavorful dish featuring tender chicken thighs cooked in a rich lemon butter sauce.

  • 4 chicken thighs, bone-in and skin-on
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 lemon, juiced and zested
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Season chicken thighs with salt, pepper, and thyme.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken thighs skin-side down for 6 minutes until golden brown.
  4. Flip chicken and cook for another 6 minutes.
  5. Add butter, garlic, lemon juice, and zest to the skillet.
  6. Baste chicken with the sauce for 2 minutes.
  7. Remove from heat and let rest for 5 minutes before serving.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F.
  • Adjust lemon to taste for more or less tanginess.
  • Serve with mashed potatoes or steamed vegetables.
