Lemon Garlic Chicken – Sheet Pan with Potatoes and Broccoli

  • 4 chicken thighs
  • 2 cups broccoli florets
  • 2 cups baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  3. Add chicken thighs to the bowl and coat them well with the marinade.
  4. On a sheet pan, arrange the halved baby potatoes and broccoli florets.
  5. Place the marinated chicken thighs on the sheet pan with the vegetables.
  6. Drizzle any remaining marinade over the vegetables.
  7. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
