Lemon Garlic Orzo

A simple and flavorful dish combining orzo pasta with lemon and garlic for a bright, zesty taste.

Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 cups vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in orzo and toast for 2 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
  6. Remove from heat and stir in lemon zest, lemon juice, and Parmesan cheese.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley if desired.

  • Substitute chicken broth for vegetable broth if preferred.
