Lemon Garlic Shrimp with Cauliflower Mash

A simple and healthy dish featuring juicy shrimp seasoned with lemon and garlic, served over creamy cauliflower mash.

  • 1 lb shrimp, peeled and deveined
  • 1 large head cauliflower, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lemon, juiced and zested
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Steam cauliflower until tender, about 10 minutes.
  2. Mash cauliflower with butter, salt, and pepper until smooth.
  3. Heat olive oil in a pan over medium heat.
  4. Add shrimp and minced garlic, cooking for 2 minutes per side.
  5. Add lemon juice and zest, then cook for another minute.
  6. Spoon cauliflower mash onto plates, top with shrimp, and garnish with parsley.
