Ingredients

  • 2 cups rolled oats

  • ½ cup almond butter (or peanut butter)

  • ⅓ cup maple syrup (or honey)

  • 2 tbsp fresh lemon juice

  • 1 tbsp lemon zest

  • 2 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • ¼ tsp sea salt

  • Optional: 1 tbsp chia seeds

  • Optional: ¼ cup shredded coconut

Instructions

  • Heat Wet Ingredients: In a saucepan over low heat, combine almond butter, maple syrup, coconut oil, vanilla extract, lemon juice, and zest. Stir until smooth.
  • Add Dry Ingredients: Remove from heat and stir in oats, sea salt, and optional chia seeds or coconut. Mix well.
  • Form Cookies: Scoop tablespoon-sized portions onto a parchment-lined tray. Flatten gently with a spoon.
  • Chill: Refrigerate for at least 30 minutes or until firm. Store in an airtight container in the fridge for up to 1 week.
