1 cup Greek yogurt
8 oz cream cheese, softened
1/2 cup granulated sugar
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1/2 cup graham cracker crumbs
2 tablespoons melted butter
Instructions
In a mixing bowl, combine the Greek yogurt, cream cheese, sugar, lemon juice, lemon zest, and vanilla extract. Mix until smooth.
In another bowl, mix the graham cracker crumbs with melted butter until well combined.
Press the graham cracker mixture into the bottom of a lined muffin tin to form a crust.
Pour the lemon yogurt mixture over the crust in each muffin cup.
Chill in the refrigerator for at least 4 hours or until set.
Once set, remove from the muffin tin and serve chilled.
Notes
For a stronger lemon flavor, add more lemon zest.
These bites can be topped with fresh berries for added flavor and decoration.
