Lemongrass Coconut Pumpkin Soup

Ingredients

  • 2 cups pumpkin, cubed
  • 1 stalk lemongrass, bruised
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 4 cups vegetable broth
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat oil in a pot and sauté onion and garlic until softened.
  2. Add pumpkin and lemongrass, cooking for a few minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Reduce heat and simmer until pumpkin is tender.
  5. Remove lemongrass and blend the soup until smooth.
  6. Stir in coconut milk and season with salt and pepper.
  7. Serve hot.

Notes

  • Adjust the consistency by adding more broth if needed.
  • For extra heat, add a chopped chili pepper during cooking.
