Lentil Kale Luxury Salad

Ingredients

  • 1 cup cooked lentils
  • 2 cups chopped kale
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the cooked lentils.
  2. Massage the kale with olive oil to soften it.
  3. Combine lentils, kale, cherry tomatoes, and red onion in a bowl.
  4. Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
