Loaded Baked Potato Soup

A rich and creamy soup made with baked potatoes, cheese, bacon, and green onions, perfect for a comforting meal.

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and bake the potatoes for about 1 hour until tender.
  2. Once baked, let the potatoes cool slightly, then scoop out the insides and set aside.
  3. In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  4. Gradually whisk in the chicken broth and milk, cooking until the mixture thickens.
  5. Add the scooped potato insides, cheddar cheese, sour cream, and half of the bacon. Stir until well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with remaining bacon and chopped green onions.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • This soup can be made ahead of time and reheated before serving.
  • Top with additional cheese and green onions for extra flavor.
