Loaded Breakfast Quesadilla

A hearty and flavorful breakfast quesadilla packed with eggs, cheese, and your favorite toppings.

Ingredients

  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 2 tbsp diced onions
  • 1/4 cup cooked and crumbled bacon or sausage
  • 1 large flour tortilla
  • 1 tbsp butter or oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add butter or oil.
  2. Whisk the eggs in a bowl, season with salt and pepper, and pour into the skillet.
  3. Scramble the eggs until fully cooked, then remove from the skillet.
  4. Place the tortilla in the skillet and sprinkle half with cheese.
  5. Add the scrambled eggs, bell peppers, onions, and bacon or sausage.
  6. Top with the remaining cheese and fold the tortilla in half.
  7. Cook for 2-3 minutes per side until golden and crispy.
  8. Slice and serve hot.
