  • 4 medium sweet potatoes
  • 1 lb ground beef
  • 1 tablespoon chipotle seasoning
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned, then add chipotle seasoning, salt, and pepper.
  4. Once the sweet potatoes are cool, cut them in half and scoop out some flesh to create a boat.
  5. Fill each sweet potato half with the chipotle beef mixture and top with shredded cheese.
  6. Bake for an additional 10-15 minutes until the cheese is melted.
  7. Serve topped with sour cream and green onions.
