  • 2 live lobsters (1.5 lbs each)
  • 2 tbsp butter
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the lobsters for 8 minutes, then cool and remove the meat from the shells.
  3. Chop the lobster meat into bite-sized pieces.
  4. Melt butter in a pan, sauté shallot and garlic until soft.
  5. Add white wine, reduce by half.
  6. Stir in cream, mustard, and half the cheese until smooth.
  7. Add lobster meat and parsley, season with salt and pepper.
  8. Stuff the mixture back into the lobster shells, top with remaining cheese.
  9. Broil for 5 minutes or until golden and bubbly.
  10. Serve immediately.

Notes

  • Use fresh lobster for best results.
  • Replace Gruyère with Parmesan if needed.
