  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into pieces
  • 1 cup asparagus, cut into pieces
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots and celery, cook for 5 minutes.
  4. Stir in zucchini, green beans, and asparagus, cooking for another 5 minutes.
  5. Add diced tomatoes, vegetable broth, and cannellini beans.
  6. Season with oregano, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Serve hot, garnished with fresh basil.
