Low-Carb Cauliflower Fried Rice

A healthy and delicious alternative to traditional fried rice, made with cauliflower instead of rice for a low-carb option.

  • 1 medium head of cauliflower, riced
  • 2 tablespoons olive oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • Salt and pepper to taste

Instructions

  1. Start by ricing the cauliflower using a food processor or grater.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for about 30 seconds until fragrant.
  4. Add the mixed vegetables and cook for 3-4 minutes until tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  6. Add the riced cauliflower to the skillet and stir everything together.
  7. Pour in the soy sauce and mix well, cooking for an additional 5-7 minutes until the cauliflower is tender.
  8. Season with salt and pepper to taste, and stir in the chopped green onions before serving.

Notes

  • For a vegan option, omit the eggs or replace them with scrambled tofu.
