Low-Carb Chicken Stir Fry

A quick and healthy low-carb chicken stir fry packed with flavor and nutrients.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add garlic, ginger, and red pepper flakes. Stir for 30 seconds.
  4. Toss in bell pepper, broccoli, and mushrooms. Cook for 4-5 minutes.
  5. Pour soy sauce over the mixture and stir well.
  6. Season with salt and pepper. Serve hot.

Notes

  • Use coconut aminos instead of soy sauce for a soy-free option.
  • Add more vegetables like zucchini or snap peas if desired.
