Low Carb Chili Mac with Fritos Alternative

A healthier twist on the classic chili mac, using low-carb ingredients and a crunchy Fritos alternative.

Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1 packet chili seasoning
  • 1 cup Fritos alternative (low-carb version)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground turkey over medium heat.
  2. Add the diced tomatoes, kidney beans, cauliflower rice, and chili seasoning to the skillet.
  3. Stir well and let simmer for 15 minutes.
  4. Stir in half of the shredded cheddar cheese until melted.
  5. Serve the chili mac in bowls and top with the remaining cheese and Fritos alternative.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • Can substitute ground turkey with ground beef or chicken.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
