Low-Carb Chocolate Chip Cookies

Easy low-carb chocolate chip cookies with almond flour and sugar-free chocolate chips.

Ingredients

  • 2 cups almond flour
  • 1/2 cup butter, softened
  • 1/3 cup erythritol or preferred sugar substitute
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, baking soda, and salt.
  3. In another bowl, cream butter and erythritol. Add egg and vanilla, mixing well.
  4. Combine dry and wet ingredients. Fold in chocolate chips.
  5. Drop spoonfuls of dough onto the baking sheet. Flatten slightly.
  6. Bake for 10-12 minutes until edges are golden. Cool before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • For crispier cookies, bake an extra 2 minutes.
  • Chill dough for 30 minutes if too soft.
