A quick and healthy dinner option featuring tender chicken breasts stuffed with pesto and cheese, rolled up and baked to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly chicken breasts and pound to 1/4-inch thickness.
  3. Spread pesto evenly over each chicken breast.
  4. Sprinkle mozzarella and Parmesan cheese over pesto.
  5. Roll up chicken breasts tightly and secure with toothpicks.
  6. Brush with olive oil and season with salt and pepper.
  7. Bake for 25-30 minutes until chicken reaches 165°F (74°C).
  8. Let rest for 5 minutes before slicing.
