Low Carb Shepherd's Pie Cauliflower Mash

A delicious and healthy twist on the classic shepherd’s pie, using cauliflower mash instead of traditional mashed potatoes for a low-carb option.

  • 1 lb ground beef or turkey
  • 1 cup diced onions
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 head of cauliflower, chopped
  • 1/4 cup cream cheese
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
  3. Add onions and garlic to the skillet and sauté until onions are translucent.
  4. Stir in mixed vegetables, beef broth, and Worcestershire sauce. Simmer for 10 minutes.
  5. Meanwhile, steam the cauliflower until tender, about 10 minutes.
  6. In a blender or food processor, combine steamed cauliflower and cream cheese. Blend until smooth. Season with salt and pepper.
  7. Spread the meat mixture in a baking dish and top with the cauliflower mash.
  8. If desired, sprinkle shredded cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
  10. Let cool for a few minutes before serving.

  • For a vegetarian option, substitute ground meat with lentils or mushrooms.
