Low carb turkey pesto roll ups

Delicious low-carb turkey pesto roll-ups make a perfect snack or light meal. They are easy to prepare and packed with flavor.

Ingredients

  • 8 slices of turkey breast
  • 4 tbsp basil pesto
  • 4 slices of provolone cheese
  • 1 cup fresh baby spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Lay the turkey slices flat on a clean surface.
  2. Spread ½ tbsp of pesto on each slice.
  3. Place a few spinach leaves and half a slice of cheese on each turkey slice.
  4. Roll the turkey slices tightly and secure with a toothpick.
  5. Heat olive oil in a pan over medium heat.
  6. Cook the roll-ups for 2-3 minutes per side until lightly browned.
  7. Remove toothpicks and serve warm.

Notes

  • Use fresh pesto for the best flavor.
  • Substitute provolone with mozzarella if preferred.
  • Store leftovers in an airtight container for up to 2 days.
