Low Carb Tuscan Chicken Magic

A delicious low-carb Tuscan chicken dish that’s easy to prepare and packed with flavor.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Cook chicken for 6-7 minutes per side until golden brown.
  4. Remove chicken and set aside.
  5. In the same skillet, sauté garlic for 1 minute.
  6. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and stir in parmesan cheese.
  8. Return chicken to the skillet and simmer for 5 minutes.

  • Use fresh spinach for best results.
  • For extra flavor, add a pinch of red pepper flakes.
  • This dish pairs well with zucchini noodles or cauliflower rice.
