  • 2 cups vegetable broth
  • 1 cup mixed vegetables (bell peppers, zucchini, carrots)
  • 1 can black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the vegetable broth to a boil.
  3. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a separate pan, sauté the mixed vegetables until tender.
  5. Add the black beans, cumin, paprika, salt, and pepper to the vegetables and cook for an additional 5 minutes.
  6. Fluff the quinoa with a fork and mix in the vegetable and bean mixture.
  7. Garnish with fresh cilantro before serving.

Notes

  • Feel free to substitute any vegetables you have on hand.
  • This dish can be made ahead of time and reheated.
  • For added flavor, consider adding a squeeze of lime juice before serving.
