  • 1 bunch of radishes, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • 2 cups mixed greens
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the halved radishes with olive oil, salt, and pepper.
  3. Spread the radishes on a baking sheet and roast for 20-25 minutes until tender.
  4. In a large bowl, combine the mixed greens, roasted radishes, and crumbled feta cheese.
