Low sugar blueberry crumble bars are a healthier dessert option. They combine a buttery oat crust, sweet blueberry filling, and a crumbly topping.

Ingredients

  • 1.5 cups rolled oats
  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup melted coconut oil
  • 2 cups fresh blueberries
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp honey

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. Mix oats, flour, coconut sugar, cinnamon, and salt in a bowl.
  3. Add melted coconut oil and stir until crumbly.
  4. Press 2/3 of the mixture into the pan to form the crust.
  5. In another bowl, toss blueberries with lemon juice, cornstarch, and honey.
  6. Spread blueberry mixture over the crust.
  7. Sprinkle remaining oat mixture on top.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool completely before cutting into bars.

Notes

  • Store in an airtight container for up to 5 days.
  • Frozen blueberries work if fresh aren’t available.
  • Add nuts to the topping for extra crunch.
