A simple and healthy sheet pan meal featuring maple balsamic-glazed salmon with roasted vegetables.

  • 4 (6 oz) salmon fillets
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 3 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk maple syrup, balsamic vinegar, garlic powder, salt, and pepper.
  3. Place salmon fillets in the center of the baking sheet.
  4. Arrange broccoli, bell pepper, and onion around the salmon.
  5. Drizzle olive oil over the vegetables and toss to coat.
  6. Brush the maple balsamic glaze over the salmon fillets.
  7. Bake for 15-18 minutes until salmon flakes easily.
  8. Serve immediately.
