  • 2 cups carrots, peeled and chopped
  • 2 cups parsnips, peeled and chopped
  • 2 cups sweet potatoes, peeled and chopped
  • 1 cup beets, peeled and chopped
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots, parsnips, sweet potatoes, and beets with olive oil, maple syrup, salt, pepper, and thyme.
  3. Spread the vegetables evenly on a baking sheet.
