Instructions

  1. Score duck breast skin in a criss-cross pattern.
  2. Season duck with salt and pepper.
  3. Heat skillet over medium heat, place duck skin-side down.
  4. Cook duck for 6-8 minutes until skin is crispy.
  5. Flip duck and cook for 4-5 minutes.
  6. Brush duck with maple syrup.
  7. Remove duck and let rest.
  8. In same skillet, add cherries, vinegar, sugar, and stock.
  9. Simmer until sauce thickens.
  10. Slice duck and serve with cherry gastrique.
