2 boneless, skinless chicken breasts
8 oz fettuccine pasta
1 cup heavy cream
1 cup chicken broth
1 cup sun-dried tomatoes, chopped
1 cup spinach
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Instructions
Cook the fettuccine pasta according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat and add the chicken breasts. Season with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Add sun-dried tomatoes, chicken broth, and heavy cream to the skillet. Stir to combine and bring to a simmer.
Add spinach and Italian seasoning, cooking until the spinach wilts.
Stir in the Parmesan cheese until melted and smooth.
Slice the cooked chicken and return it to the skillet, along with the cooked pasta. Toss everything together until well coated.
Serve hot, garnished with additional Parmesan cheese if desired.
