This Greek-inspired grilled cheese sandwich is loaded with mozzarella and feta, black olives, baby spinach, sun-dried tomatoes, and herbs—all melted between golden brown slices of artisan bread. It’s an easy, veggie-packed twist on a comfort food classic!

Ingredients

  • Artisan bread (sourdough, ciabatta, or whole grain)

  • Unsalted butter, softened

  • Shredded mozzarella cheese

  • Crumbled feta cheese

  • Sun-dried tomatoes, chopped

  • Kalamata or black olives, sliced

  • Fresh basil leaves

  • Dried oregano (optional)

  • Roasted red peppers (optional)

  • Baby spinach or arugula (optional)

  • Grilled eggplant or zucchini (optional)

Instructions

  • Butter the Bread: Spread softened butter on one side of each bread slice.

  • Build the Base: Lay two slices, buttered side down. Add half the mozzarella.

  • Add Fillings: Layer sun-dried tomatoes, olives, basil, and greens if using.

  • Add Feta and Oregano: Sprinkle crumbled feta and a touch of oregano.

  • Top with More Cheese: Add remaining mozzarella over the fillings.

  • Close the Sandwich: Top with buttered bread slices, buttered side up.
