This Greek-inspired grilled cheese sandwich is loaded with mozzarella and feta, black olives, baby spinach, sun-dried tomatoes, and herbs—all melted between golden brown slices of artisan bread. It’s an easy, veggie-packed twist on a comfort food classic!
Artisan bread (sourdough, ciabatta, or whole grain)
Unsalted butter, softened
Shredded mozzarella cheese
Crumbled feta cheese
Sun-dried tomatoes, chopped
Kalamata or black olives, sliced
Fresh basil leaves
