Mediterranean Lasagna

Mediterranean Lasagna is a flavorful twist on the classic Italian dish, incorporating fresh vegetables, herbs, and a rich tomato sauce for a delightful meal.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté zucchini, bell pepper, and mushrooms until tender.
  4. In a bowl, mix ricotta cheese, spinach, oregano, basil, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetables, and a third of the mozzarella cheese.
  7. Repeat the layers, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

  • Feel free to add other vegetables like eggplant or artichokes for more flavor.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • For a gluten-free version, use gluten-free lasagna noodles.
