Mediterranean lemon olive chicken

A simple and flavorful Mediterranean dish featuring tender chicken marinated in lemon and olive oil with aromatic herbs.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley for garnish

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes per side until golden and cooked through.
  4. Garnish with fresh parsley before serving.
