Mediterranean Quinoa Salad

A refreshing and nutritious Mediterranean Quinoa Salad packed with fresh vegetables, herbs, and a zesty lemon dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let it cool.
  4. In a large bowl, combine cooked quinoa, cucumber, red bell pepper, cherry tomatoes, red onion, olives, parsley, and mint.
  5. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Sprinkle feta cheese on top before serving.

Notes

  • You can add grilled chicken or shrimp for extra protein.
  • Store leftovers in an airtight container for up to 3 days.
  • Use gluten-free quinoa if needed.
