Mediterranean shrimp orzo bowls

A simple and flavorful Mediterranean shrimp orzo bowl with fresh vegetables and herbs.

  • 1 cup orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add shrimp and cook for 2-3 minutes per side until pink.
  3. In a large bowl, combine cooked orzo, shrimp, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. Drizzle with lemon juice, sprinkle oregano, salt, and pepper. Toss gently.
  5. Garnish with fresh parsley before serving.
