  • 2 cups of Mexican rice
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic, cumin, and chili powder, cooking for an additional minute.
  4. Add the Mexican rice, black beans, and corn to the skillet.
  5. Pour in 4 cups of water or broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  7. Fluff the rice with a fork and season with salt and pepper.
  8. Garnish with fresh cilantro before serving.

Notes

  • This dish can be made ahead of time and reheated.
  • Feel free to add other vegetables like zucchini or tomatoes.
